lazy days

so you don't get much of a post today...
i have this overwhelming feeling of apathy and i am sooooo unmotivated to do anything..........
it's kind of depressing.

so searching the internet for a mood-booster, i found this gem.
i just have to say thank you to whoever wrote this.

ways to get there faster...


i've decided something.
i can't focus without pressure.
i mean, i've sat in the library for at least 2 hours already... and have done all of the homework that i feel inclined to do. especially because none of it is actually due until friday.
doesn't particularly motivate me to get anything done...
i know i am going to regret this later.

now i wanna know-
does this actually work???

"how to use an elevator..."
too bad there aren't any elevators nearby or i would try this right now.
forget the homework.
...but i would need an elevator with more than 2 floors to make this worthwhile!
next time i'm in an urban metropolis (like idaho falls??? har har har...) i'll give this one a whirl.
ooooooh i'm burning with curiosity right now!

and i've decided that i fail on a few things:
(you know those little new years resolutions that you get so gung-ho about for the first week of the year? yeah... i found it yesterday.)
i'm telling you so that you can hold me accountable now.
failed resolution #1: write my best pal on his mission in canada every week.
failed resolution #2: memorize a poem every month... i am still going to do this! i just have to make up for january and february.
failed resolution #3: using the snowshoes that i got for christmas. i blame school. otherwise i would be out there right now instead of very uneffectively trying to study.
failed resolution #4: stop caring about boys. as much as i try... i don't think that this one is possible.
failed resolution #5: blog 3 times a week. ooops. i will be working on that one though!
i promise!!!

so i'm pretty sure that there are more of these little puppies that i've missed, but that's ok, at least now you know that i'm not perfect. cuz i know you all though that i was, you awesome people you! sorry if your whole world is crashing down around you now.

i always feel like i have to make smaller goals.
new years resolutions aren't really a good thing for me, because i get too overwhelmed...
weekly and daily planning are much more my thing.
what are my rocks?
i am talking about an analogy, but probably not the one you were thinking of.
not stumbling blocks, but priorities.
i love stephen covey.
being the goal-driven, plan-everything type of person i am, reading "the seven habits of highly effective people" was heaven-sent.
i mean, he tells you how to be effective.
not doin so well with that one today, but i'll live i guess...

A man stood in front of the group of high-powered overachievers, and he said,
"Okay, time for a quiz." Then, he pulled out a one-gallon, wide-mouthed Mason jar
and set it on a table in front of him. Then he produced about a dozen fist-sized
rocks and carefully placed them, one at a time, into the jar.
When the jar was filled to the top and no more rocks would fit inside, he asked, "Is
this jar full?"
Everyone in the class said, "Yes."
Then he said, "Really?" He reached under the table and pulled out a bucket of
gravel. Then he dumped some gravel in and shook the jar, causing pieces of gravel
to work themselves down into the spaces between the big rocks.
Then, he asked the group once more, "Is the jar full?" By this time, the class was
onto him. "Probably not," one of them answered.
"Good!" he replied. He reached under the table and brought out a bucket of sand.
He started dumping the sand in and it went into all the spaces left between the rocks
and the gravel. Once more he asked the question, "Is this jar full?"
"No!" the class shouted. Once again, he said, "Good!" Then, he grabbed a pitcher of
water and began to pour it in until the jar was filled to the brim. Then, he looked up
at the class and asked, "What is the point of this illustration?"
One eager beaver raised his hand and said, "The point is, no matter how full your
schedule is, if you try really hard, you can always fit some more things into it!"
"No," the speaker replied, "that's not the point. The truth this illustration teaches us
is: If you don't put the big rocks in first, you'll never get them in at all."
What are the ‘big rocks’ in your life? A project that YOU want to accomplish? Time
with your loved ones? Your faith, your education, your finances? A cause? Teaching
or mentoring others? Remember to put the BIG ROCKS in first or you'll never get
them in at all.
So, tonight, or in the morning, when you are reflecting on this short story, ask
yourself this question: What are the ‘big rocks’ in my life or business? Then put
those in your jar first.

what are my rocks?
i am usually fairly good at organizing my time, but lately i have definitely been a little on the "fly by the seat of my pants" kick.
not doin so hot.
(even though i thrive off of stressful situations, being unorganized is not part of that procedure...)

this is what my "bucket of rocks" has looked like recently.
i need to take mr. covey's advice.
big rocks first.
then i can fill in with the other "fluff" later.
deal? deal.

oh, speaking of things i've done with my time...
i made these little beauties...

(do they not sound divine? trust me... they are.)
and super easy too!

1 C. all purpose flour
1 C. cake flour

1 1/2 t. baking powder

1/2 t. salt

1/2 t. ground cinnamon

1/2 t. ground nutmeg

1/4 t. ground allspice

1/4 t. ground ginger

6 T. unsalted butter

1/2 C. raisins (optional)

1/3 C. pumpkin puree

1/3 C. heavy cream

6 T. brown sugar

1 t. vanilla

1. Preheat oven to 425 degrees. Get out a baking sheet and line with parchment paper (not required but makes cleanup easy!). Cut the butter into small pieces, put it in a small bowl and put it back in the refridgerator. In a medium bowl, combine both flours, baking powder, salt, and all spices. Whisk together well. Place bowl in freezer (refrigerator is fine if you have no room in freezer).

2. In a separate bowl, combine pumpkin, heavy cream, brown sugar, and vanilla. Whisk together well. Put this bowl in freezer (or refrigerator) and take the other bowl back out. Get the butter pieces out of the fridge and dump them into the bowl with the flour mixture. Cut the butter into the flour using a pastry blender or rub it in with your fingertips until it resembles coarse crumbs. Stir in the raisins if you are using them.

3. Get the liquid mixture out of the freezer and pour into the flour mixture all at once. Stir with a wooden spoon until everything is just moistened. The dough will be very crumbly, this is the way it should be. Turn the mixture out onto the counter and push the pile together with your hands. It should stick together fairly well. Knead it just a couple of times until everything is together. Don’t knead it too much or the dough will get too sticky.

4. Pat the dough out into a rough circle, 3/4 to 1 inch thick. Cut it like a pie into 8 pieces. Place pieces on the baking sheet so that they are not touching. Bake scones for about 15 minutes at 425 degrees. They should be light brown on the bottom, the tops will darken as they cool.


Icing: For ginger molasses icing, stir together 1 T. molasses, 1-2 T. milk, and 1/4 – 1/2 t. ground ginger (to taste). Adjust the amount of sugar or milk to make the icing the consistency you want. It should be pretty thick. For cinnamon icing, mix together 1 C. powdered sugar, 2 T. milk, 1/4 – 1/2 t. cinnamon (to taste). Again, adjust amounts to change consistency. Icing can be brushed on or drizzled.


it only makes 8...

so if you have 6 roommates

(just a suggestion)

you might want to stash the extras if you want to have any left over for yourself.

i learned this one the hard way.


so if you get to eat any of the fruits of your hard work...

meltation: my new word for melting snow (just cuz it sounds weird)

i know i'm late!
i was going to post this yesterday i swear!

but procrastination (mainly attributed to laziness) got the best of me.
actually, i didn't want to post anything until i got this done.


we were wandering through the store getting root beer floats
...when yours truly had a brain blast!
and this amazing stop-motion film was born!
don't laugh.
we may be 20 years old but we still like playing with playdough.

so i don't always finish the bananas i buy...
and so i have random bananas in the freezer.
i think my roommates hate me.
but i got rid of most of them yesterday!
(there are only 2 left now...)

1 1/2 cups flour
1/2 cup rolled oats
1 tsp baking soda
2 1/2 tsp baking powder
1 heaping tsp ground cinnamon
3-4 ripe bananas, mashed
1/3 cup apple sauce
1/4 cup coconut oil
2 eggs
1/2 cup honey
2 tsp vanilla extract
pinch of sea salt

preheat oven to 350
in a mixing bowl, mix together the dry ingredients (flour, oats, baking soda, baking powder, sea salt and cinnamon)
in a separate bowl mix together the remaining ingredients until thoroughly mixed
mix the wet into the dry
mix until well blended
grease a 9x13 in pan
pour batter into the pan and distribute evenly with a spatula
place in the middle of the oven and bake for 40 minutes or until lightly brown on top, firm to the touch and a toothpick comes out clean
option: chocolate chips! add about 1/2 cup once batter is mixed. that turns this from banana bread into banana cake... (i'm pretty sure that it was cake to begin with...)

so somewhat healthy... i kicked myself after i made it because i made it with white flour and i had whole wheat flower in my cupboard the whole time!
blast!

i just bought her comfort foods cookbook online... i haven't had the chance to try it yet, but i was looking over the recipes in there and salivating even more every time i turned the page.
cook books are not good for me.
you enable a alcoholic by buying them a drink, you give me a cookbook and i'm sunk.
just leave me alone for the next few hours cuz i'm a gonner!

i need thick wool tights. it is 31 degrees and i am in a dress.

today i am able to focus on just about everything but my computer.
unless it meant blogging.
(you should feel very priviledged)
because the whole reason i left the apartment was to study...
it's not going to happen today.

i watched megamind last night.
such a cute movie!
i freakin love it.
will ferrell is a genius...
who else can pull of saying "i feel so mel-an-choly" (emphasis on the second syllable there) and still be an evil genius?
definitely not the way that i thought the movie was going to go, but i think it was actually better! and i love how he has theme music for everything.
i think i will come up for a playlist for when i strut around campus.
just because it would be cool.


this isn't in the movie, but i think it deserves some serious respect!
(besides, when i hear it i can't get it out of my head for the rest of the day. a catchy tune like that has got to be forced upon others...)

it's not neglect i assure you...


i have been incredibly busy this week.
no lie.
i have wanted to write! but there was always something a little more pressing on my schedule... but to make up for it i have an fantastic little playlist of goodness!

to recap the week:
i went home last weekend! (yet another reason i didn't post... i was way too busy having fun with my brothers and sisters at home!) we kidnapped our cousin and brought her home
with us... we really wanted to surprise our parents... but it just so happened that one of the guys we were bringing home with us has a very grateful mother.
i love grateful people. don't get me wrong... but not when they ruin my surprise! (she came up to my mom to thank her for her daughters bringing her son home this weekend... blast!)
so i get a text from my dad. "should we leave the front door open for you guys?" to which i played dumb and pretended not to know what he was talking about... the only thing he said back to me was, "just don't wake me up." thanks dad. love you too.
we had a basketball overload - my sister's team got 5th in state! granted, they are a 1A school,
but that's still good for us! our school got sports my sophomore year in high school, so it's still a new program... we get closer every year though!
finally i got to see one of my best friends from high school...
love this girl!
she's got a sweet little girl with one more on the way - it's incredible how fast time flies! (and here i am... still single and as clueless about life as ever!!!)


so you all know about my obsession with d.i.
i bought some ramekins there last semester, and never got to use any, so carissa and i decided that we were going to be really courageous and make something really great! we narrowed the selection down to 2 things. either souffles or miniature pies. since i had apples that were going bad earlier in the semester, i had cut them up and put them in the freezer. perfect! mini apple pies. bam. done.


i was trying to hide the fact that i parted my hair down the middle.
not my look.
and carissa pretending to have helped make them...
just kidding! love you rissa... i know you were there for moral support the whoooooole time!

...and it was gooooooooooooooood.
we did a little variation on grandma opal's apple pie (an allrecipe recipe that we made for thanksgiving this year... it has a very yummy carmel inside...)
while i was making the carmel, i got a little too much help from a guy in my ward. yes. i know how to make carmel. you have obviously not had my carmel corn before. yeah, that's right... just step away from the saucepan and you won't get hurt... so the carmel didn't get as done as it needed to. nevertheless it was still a success!
i wish i had a recipe for this one... but we basically just threw some of my frozen apples, 1/3 cup of sugar, cinnamon (i think i was aiming for like a tablespoon... but it kinda spurted out... so i'm not quite sure on that one) and a little nutmeg.
i did actually find a recipe for the crust, since i didn't want to be left with tons of crust...
we mixed 1 cup of white all-purpose flour with 6 tablespoons of butter and 2 tablespoons of col
d water. i don't know about you, but it was pretty intense in the kitchen when trying to figure that one out... ;) we used the extra crust and cut out little strips to make the cutsie lattice-look on the top.
to put it all together:
i used a bowl to cut out a circle (which still ended up being too big... i just squashed it around when i put it in the ramekin.) and then filled the crust with the apple mix. i rolled out the
leftover pie crust and cut it into little strips and laid them on top of the apples to make the lattice, and then poured the carmel over the top of the pie and threw it into the oven! voila! we threw it in the oven on 375 for about 20 minutes.
pros: you eat your pie. you don't keep going back for more slices because everyone just gets one. (i like this plan...)
cons: it runs out. no more pie. this is when you give a puppy dog look to the person sitting next to you and hope that they are merciful and give you a bite.

yada yada yada... the week continues.
not much else happened... except... drumroll please!!!

i cut my hair!

i used to have bangs.
a very low point in my existence.

and hated her curly hair

she had bangs...
that probably should have belonged back in the 80s.
she had them for several years. (think 3rd through 8th grade.)
and she would go through what she likes to refer to as "hair dispensations"
a year of braids.
a year of "some up/some down" (whatever that half-ponytail is called...)
and several years of ponytails.

finally, she decided that she had pretty hair (and - get this - she liked her curl! hallelujah!)
so she grew the bangs out and vowed that she would never ever ever ever have them again.
she was true to her word... until yesterday.
what do you think?
good choice?
she thinks so.

you take my breath away... literally.

dear mr. cold.
i hate you.
despite the fact that you are a major inconvenience on my life normally, i would
really appreciate being able to get back to hanging out with my family. since this is the first weekend i have been home this semester. instead i am sitting on the couch coughing and feeling like a lame fool
because i can't do anything. please go and bug somebody else.

in my best attempt to pretend that i am a healthy individual, i went for a run this morning. oh my heavens the weather here is amazing! going from crazy rexburg, idaho weather
to boise is
like walking into a sauna. (not really) but gone is the snow, the wind, the ice, the boots, the jackets, and the thermal socks. i almost felt like i should be wearing shorts!
oh i can't wait for this summer!

but for now, i must make do with the methods to entertainment i have been given...
i think snow sculptures sound like a fantastic idea right now. :)
do you collect anything?
i collect lots of things.
which are... mostly things.
i have always wanted to find something that i really like. that i want to have a lot of. (and not have it look like a bunch of crap that is taking up space...)
my sister collects perfume bottles.
my other sister collects salt and pepper shakers.
i collect... stuff.
but not anymore! i have discovered something that i love.
and i love it sooooo much! (no these aren't mine, but i wish they were!)

i have a couple of suitcases that i bought... not even realizing that i would start a collection, just knowing that i thought they were awesome!!!
i don't have a ton, because i get overzealous really easily, and i don't want to buy some just because i am "collecting" them. i just have to keep reminding myself - "take it easy jess..." (said with a nacho libre accent in honor of our party on wednesday) this means that i have an obsession with the D.I... (this is where i usually assuage my addiction)
i love old luggage with personality and cute little cups. none of the cups in my cupboards match... my roommates might get annoyed that they don't stack, but for now they have the decency not to tell me and undermine my joy. i love them so much!
one of these days you might get to meet them all!

ah! i almost forgot about today's music!
i shan't forget that!

isn't it true though?

i was reading through one of my journals, and i found that quote.

i always seem to find ones that speak right to my very core. that make me want to be a better

person, and that give me the boost that i need to...



i'm pretty sure that this is my favorite saying of late.

with all the stress of an upcoming study abroad (even though i am extremely excited! ...it is still nerve-racking and i just love to worry about stuff anyways), applying for nursing schools, dating, not dating, making friends, going to class, homework, and trying to stay sane by

cooking... i just have to remember to keep movin' on!



we had an experiment tonight... we started out with a potato soup, and just kept adding stuff from the fridge that needed to be eaten. so we ended up with a very interesting (but very yummy!) soup. and we decided we needed bread to go with it, so we hopped in the car and drove down the street to maverik to get a $1 loaf of french bread.


keep calm and carry on!

i've decided that life is ok, and stressing about stuff will only waste energy.

energy that i need! (to have awesome nacho-libre themed parties like tonight!!!)

we even made a paper-mache luchador-mask pinata!

it took serious skill.

(yes, i am the idiot that painted it... don't laugh)


oh, and i did mention we dyed our hair?

i had to make sure to hide the hair when i went to the testing center today. they don't look too kindly on those of us who express their individuality through our choice of hair color. it does not look as good as my roommates - she is super blonde so it turned bright blue. mine looks kinda green.
