this makes me want to make a music video.
right now.
i don't care if it is almost one in the morning. i want to make it nowwwwww!
(yes... i did just throw a temper tantrum via a blog post...)


how was everyone's weekend?
that fantastic huh?
mine was pretty chill... one of my friends tells me that
he is going to open up a small business that sells baked goods
and he would pay me to do it.
even though it is a little bit different than the direction i am planning on taking,
i told him i would think about it. ;)
who knows?
sounds like a lot of fun...
(those are famous last words if i've ever heard any!)

i have a few recipes that i consistently go back to.
most of the time i just try a recipe once or twice, and forget about it entirely
but this recipes is just so good!
and it uses up the apples that i don't want to eat...
(you know apples when they taste spongy? ick. i can't stand them!)
but they make mighty tasty muffins!
hurrah!

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples

1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin
comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

my tips for making these the best apple strudel muffins EVER?
i always (always always always always alwaaaaaaaaaaaaaaays) add cinnamon to the batter.
i actually add a lot of cinnamon.
and remember to follow the order... i made these tonight, and i got cocky.
i thought that jessica was too good for recipes.
until it ended up like cookie dough.
not. good.
so i repented and actually made cookies with the dough.
(not the best... they were actually like shortbread...)

but there are such things as second chances!
and forgiveness
and the second batch was perfect!
you can use a mixer to beat the eggs, sugar and butter
but i always hand mix the rest.
and the recipe makes exactly 12 muffins.
i just fill all the cups until i don't have any more dough left.

you want proof that these are the best?
my roommate was talking on the phone and had to explain
to her friend on the other end why she was sighing...
"because i am eating the best apple muffin i have ever tasted!"
'nuf said.
